Spice Bread

I've seen some other recipes floating around recently, but a couple years ago I threw together a recipe for spice bread. Yes, because of Mulgore spice bread. It looks something like:
  • 2.5c flour
  • 1/2c sugar
  • 1/2c brown sugar
  • 3.5 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1.25c milk
  • 1 egg
And then I have written down:
  • Cinnamon - about a teaspoon
  • Ginger - about a teaspoon
  • Cloves - about 1/2 a teaspoon
  • Nutmeg - 1/4-1/2 a teaspoon
  • Allspice - 1/4-1/2 a teaspoon
  • Cardamom - about 1/4 a teaspoon
  • Pepper - 1/4 teaspoon
But what I really put in is more like:
  • Cinnamon - about a teaspoon and a half
  • Ginger - about a teaspoon and a half
  • Cloves - about a teaspoon
  • Nutmeg - about 1/2 a teaspoon
  • Allspice - about 1/2 a teaspoon
  • Cardamom - about 1/2 a teaspoon
  • Pepper - 1/4 teaspoon
Mix it all up, bake it in a loaf pan at 350 F for about an hour, until a toothpick comes out clean. (Our oven had a broken temperature sensor when I was developing this, so you'll want to watch it.)

It can be modified for a cake - another egg, increase the oil to 1/2 cup, add another 1/2 cup or so of sugar. Cream cheese frosting would be good, but I usually just do a vanilla (or almond) butter frosting.
